Heirloom Tomato Toast
Tomato season is well on it's way out but let's cherish the last couple weeks of those beauties. #blessup
- Good, crusty bread
- Clove of garlic, peeled
- Heirloom tomatoes
- Fresh basil
- Maldon salt
- Olive oil
Start by rubbing a cast iron skillet (or your preferred cooking pan) with the garlic clove. This will infuse the oil from the garlic into the pan. Turn on the heat and add a drizzle of olive oil to coat the bottom of the pan.
When in the oil is heated, add your slice(s) of bread and allow them to cook on each side until golden and crisp. If you're short on time (or just don't want to bother with a frying pan) then you could also toast the bread in the toaster and add a drizzle of oil or spread it with butter after.
Chop your heirloom tomatoes into small chunks or large slices, whatever you prefer. Pile them onto the warm toast and sprinkle with basil leaves. Add a few pinches of maldon salt and a drizzle of olive oil. Done!
