Every year for me and my siblings' birthdays when we were growing up, Pam (my mother) would make dutch babies for dinner. She would serve them with whipped cream and apples cooked in a little butter, cinnamon, and sugar. It seemed like magic the way the batter would puff over the sides of the pan. I remain obsessed with them to this day. Usually I make the recipe that Pam does but I couldn't find it this past weekend so I made this one instead. I added a little lemon zest and a pinch of salt to the batter and served with fresh strawberries and a sprinkle of powdered sugar.
