FISH TACOS

This recipe is adapted from A New Way to Dinner. We grilled the fish but you could most definitely roast it in the oven. It's easy to cook more fish if you're serving more people, so do as you must.
  • 2 filets white fish, we used tilapia 
  • Cumin
  • Chipotle powder
  • Salt and pepper
  • Olive oil
  • Toppings of your choice - we used avocado, red onion, parsley (because we didn't have cilantro), lime wedges (for a final acidic kick), some curried cauliflower (because we had it) and crema. 
  • Small tortillas

Place the fish in a baking pan and sprinkle with a little cumin, chipotle powder, salt, and pepper. Drizzle lightly with olive oil and let the fish sit out for 30 minutes to marinate. Meanwhile, get the coals of the grill going or preheat the oven to 350 degree. 

Cook the fish on grill for a couple minutes on each side or in the oven for about 10 minutes. Serve the hot fish with warm tortillas and bowls of your toppings.
